COW PARSLEY (Anthriscus sylvestris): Pheirsil bhó (Irish) is a beautiful native plant which adorn our road sides in the month of May with its tall stakes and delicate white flowers. It is often referred to as Our Lady’s Lace and used to decorate the altar in the month of May to honour Our Lady. It has a distinctive scent on warm days. Cow parsley provides nectar for bees, wasps, flies and beetles. It can be planted in formal or informal gardens and as part of meadows.
